Ingredients:
1 3/4 cup all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
1/4 cup sugar
1 1/2 cup brown sugar (packed)
1 cup *GHEE from ingredient
2 large egg
4 teaspoons vanilla extract
2 cups raisins
4 cups old fashioned rolled-oats
Directions:
Preheat the oven to 350 degrees F.
Whisk together flour, baking soda, baking powder, salt, and cinnamon
In a standing mixer, beat together ghee, sugar, brown sugar, eggs, and vanilla
Add the flour mixture to your mixer, continue mixing until combined
Gently mix in raisins and oats
Scoop mixture onto a parchment lined baking sheet (approximately 6/tray)
Smash down each cookie aiming for 1/2-3/4 inch thickness
Bake 10-12 minutes, until light golden brown
Cool on baking sheet
