Infused Oatmeal Raisin Cookies




Ingredients:

  • 1 3/4 cup all-purpose flour

  • 3/4 teaspoon baking soda

  • 3/4 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/4 cup sugar

  • 1 1/2 cup brown sugar (packed)

  • 1 cup *GHEE from ingredient

  • 2 large egg

  • 4 teaspoons vanilla extract

  • 2 cups raisins

  • 4 cups old fashioned rolled-oats


Directions:

  • Preheat the oven to 350 degrees F. 

  • Whisk together flour, baking soda, baking powder, salt, and cinnamon

  • In a standing mixer, beat together ghee, sugar, brown sugar, eggs, and vanilla

  •  Add the flour mixture to your mixer, continue mixing until combined

  • Gently mix in raisins and oats

  • Scoop mixture onto a parchment lined baking sheet (approximately 6/tray)

  • Smash down each cookie aiming for 1/2-3/4 inch thickness

  • Bake 10-12 minutes, until light golden brown

  • Cool on baking sheet
