Infused Buffalo Chicken Meatballs




Ingredients:

  • 1 lb ground chicken

  • 1 egg

  • 2 celery stalks, finely chopped

  • 1/3 cup hot sauce

  • 4 tbsp  *GHEE from ingredient

  • 1/3 cup bread crumbs

  • 1/3 cup crumbled blue cheese

  • 1/4 cup sliced green onions

  • 2 cloves minced garlic

  • 1 tsp salt

  • 1/2 tsp onion powder


*(Ghee/Butter ratio can be adjusted for weaker infusion if preferred)


Directions:

  • Preheat the oven to 350 degrees F. 

  • Brush large baking sheet with oil

  • In a small saucepan, combine GHEE, hot sauce, blue cheese, and salt over medium heat

  • Whisk until butter and cheese have melted ~2 minutes. remove from heat and let cool

  • In a medium bowl, combine bread crumbs, celery, garlic, egg, green onions, and onion powder

  • Add chicken and half of the hot sauce mixture, mix until combined

  • Form 1-inch meatballs and transfer to oiled baking sheet

  • Bake for 15-17 minutes (or until lightly golden)

  • Drizzle remaining sauce over meatballs before serving



Optional additions and substitutes:

  • Add in one finely diced jalapeno into the breadcrumbs/celery mix for extra spice

  • Replace ground chicken with ground beef, turkey, or desired protein.

  • Replace blue cheese with freshly shredded parmesan or cream cheese if preferred
