Ingredients:
1/2 stick (2 oz) unsalted butter, softened
1/3 c light brown sugar
1/4c granulated sugar
1 large egg
1 teaspoon vanilla extract
1c all-purpose flour
1/2 teaspoon salt
1/2 teaspoon instant espresso powder (optional)
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1c semisweet chocolate chips
1/4c GHEE by ingredient
Preheat oven to 375 degrees
Lightly spray an 8x8 pan with cooking spray (or line with parchment paper - we like to leave excess on the sides to help remove the bars after cooling)
In a medium bowl, cream the butter, GHEE, and sugars until light and fluffy (about 1 min)
Add the egg and vanilla, beat until combined
Sprinkle flour, salt, espresso, baking soda, and baking powder on top of the mixture.
Beat until just combined, Don't over-mix
Stir in chocolate chips
Press the batter into the pan and bake for 15 minutes. (Edges of cookie should start to brown, but be mindful not to overcook or they'll be dry)
Let them cool in the pan for about 5 minutes then use the parchment handles to remove from the pan. Let cool completely before slicing and serving.
